God loves wine and we will be drinking it with him in Heaven (Matthew 26:29.) I don't know what the prohibitionists will be drinking...

I have enjoyed beer since my earliest memories. I have traveled most of the way around the world and here are some of my favorites:

Phil and I brew from all-grain in 10 gallon batch sizes. Even though we are brewing in the garage, everything that touches the wort (pre-beer) is carefully sanitized.

Vacu-Racking a Chilean Merlot


Phil and I make wine too. I've made wine from grape extract as well as store-bought grapes. Guess what? Flagstaff is not prime grape growing country (our growing season is shorter than Juno Alaska! Really, in 2002 we had a freeze in June and September!!!) Anyway, what is Vacu-Racking? I think I came up with this myself, though there is "nothing new under the sun." I use a vacuum pump to rack the wine, removing all of the carbon dioxide in the racking process. It also seems to help clear the wine more rapidly. Cool. I don't suppose everybody has access to the equipment and knowledge I do, but e-mail me if you want instruction on how to do this.
